According to some estimates, in 2050 there will be 2 billion more inhabitants on the planet, resulting in a 60% increase in demand for food. Already at this time, about a third of emissions are linked to food production with a use of 40% of land and 70% of water, becoming a threat to 47% of biodiversity.
China has a great culinary culture but it is very easy, in terms of exports from Italy and Europe, to find the possibility of selling single ingredients rather than final culinary products.
